Heat the oil and butter in a large, deep, frying pan. When very hot, but not smoking, carefully add the garlic, chillies and prawns all at once. Cook, stirring, for 3 minutes, or until the prawns turn pink. Take care not to overcook the prawns.&lt;br /&gt;2. Using a large spoon, quickly transfer the prawns into 4 hot individual serving dishes and drizzle with some of the garlic butter. Sprinkle with the parsley and serve with crusty bread to soak up the juices.&lt;br /&gt;Tip: This recipe is traditionally cooked in small cast-iron pots (available from kitchenware shops). Yes! Try this trio of mouthwatering seafood tastes as an alternative to Christmas turkey. Individually make great starters any time.&lt;br /&gt;Salmon with pesto dressing: 1/4 cup extra-virgin olive oil 2 tbsp basil pesto Sea salt, to taste 1 tsp white-wine vinegar 4 medium boiled or steamed potatoes, peeled 4 portions roasted smoked salmon Garnish: Thin lime wedges&lt;br /&gt;Prawns and peppers: 1/4 cup extra-virgin olive oil 1 tbsp tiny capers 1 clove garlic, finely chopped 1 tbsp lemon juice Sea salt, to taste 12-20 cooked prawns, shelled and de-veined, tails left on 1 1/2 large roasted red peppers, peeled, de-seeded and sliced 1 1/2 tbsp finely shredded mint leaves&lt;br /&gt;Smoked salmon and avocado timbale: 1 just ripe avocado, peeled and finely diced 2 tbsp finely chopped roasted red pepper 2 tsp chopped chives Sea salt, to taste 200g smoked salmon, finely shredded 2 tbsp creme fraiche (or light sour cream) 1 tbsp chopped chives, extra 2-3 tsp horseradish relish Garnish: Creme fraiche, salmon or red lumpfish roe, dill sprigs&lt;br /&gt;Here's how: 1 First make the dressing for the salmon by mixing together the oil, pesto and salt. Add the vinegar just before using the dressing. Next make the prawn dressing by mixing together the oil, capers, garlic, lemon juice and salt in a large bowl.&lt;br /&gt;2 For the timbales, in one bowl gently stir together the avocado, peppers, chives and salt. In another mix together the smoked salmon, came fraiche, chives and horseradish relish.&lt;br /&gt;3 To serve, form an assembly line of all the bowls of dressing and ingredients. To start with, mix the vinegar into the salmon dressing, then stir the prawns, peppers and mint into the caper dressing.&lt;br /&gt;4 For each serve, slice a potato into rounds and fan them out on the plate. Drizzle a little pesto dressing over each, then top with a portion of roasted smoked salmon, a little more dressing and a wedge of lime. Next, arrange a small pile of prawns and peppers on the plate.&lt;br /&gt;5 To make the timbales, put a medium-size scone cutter onto each plate and spoon in about one-quarter of the avocado mixture until it reaches halfway up the sides. Wash the potatoes and prick 4 times with a skewer, .then put the potatoes around a edge of a microwave – safe plate , Zap on high for 7-8 minutes or until tender. Allow to cool slightly.&lt;br /&gt;2. Cut z potatoes into 1cm – thick slices. Put in a mixing bowl. Add the radicchio leaves, sing a little song. Remove pomegranate seeds and add them to the bowl, Toss combine, say something in Italian and then drizzle over the red wine vinegar sauce to serve.&lt;br /&gt;3. To make z sauce, put the red wine vinegar and juniper berries in a small heavy- based saucepan (the one you use when you hit the ol man up the side of the head)over a medium heat. Bring slowly to the boil while you hum you favorite tune ,reduce the heat and simmer for 4 minutes or until the mixture reduces by half .Strain through a sieve, Discard juniper berries, combine z red wine vinager mixture with the olive oil, Allow to cool. Whisk egg yolks in a heatproof bowl over a saucepan of simmering water, whisking constantly until the yolks are pale and thick, yikes that reminds me of someone,.sorryz anyway Slowly add z red wine mixture, whisking until the mixture is thick and light..&lt;br /&gt;Okay you going to want something to go with this that is also pink and yummy also good for you Farmed Atlantic salmon is rich and naturally source of omega-3 which has been scientifically proven to help in preventing coronary heart disease, high blood pressure, rheumatoid arthritis and even depression, Salmon is a highly nutritious food containing protein, essential fatty acids, anti-oxidants and vitamins A and B as well as calcium, phosphorus potassium and sodium.&lt;br /&gt;Rose is a dry red to medium – dry wine with a hint of strawberries and raspberries&lt;br /&gt;&lt;span style="font-size:180%;"&gt;Salmon poached in rose&lt;/span&gt;&lt;br /&gt;This will take 5 minutes preparation time&lt;br /&gt;20 minutes to cook , 2 minutes to eat&lt;br /&gt;Serves 4&lt;br /&gt;You will need for this adventure&lt;br /&gt;375ml rose(half a bottle) the other half chill and drink?&lt;br /&gt;1 leek, washed, sliced (leeks need careful washn in cold running water to remove any dirt that is clinging also after slicing wash again.&lt;br /&gt;100g jar of Pink peppercorns, drained&lt;br /&gt;1 lemon, sliced&lt;br /&gt;4 small Salmon fillets&lt;br /&gt;1. Put the rose , leek, peppercorns and lemon in a deep heavy based saucepan over a medium heat. Bring to the boil .Reduce heat and simmer for 2-3 minutes&lt;br /&gt;2. Add the Salmon to simmering liquid in a single layer. Cook for 8 – 10 minutes or until just cooked, transfer fillets to a tray. Cover with foil to keep warm. Pour yourself a glass of rose it should be cold enough,.&lt;br /&gt;3.Slowly bring the rose mixture to the boil, while you sippin on that chilled rose, and then simmer for 5- 6minutes or until it has reduced by one – third and slightly thickened.&lt;br /&gt;4. Remove salmon skin and bones. Break into large flakes. Arrange salmon over the warm potato and radicchio salad, .spoon over Rose sauce and serve,,&lt;br /&gt;Cheers!&lt;br /&gt;Yikes you want a desert to go with this I hear you say okay well you going to need a Pink desert 2,.this will take you as long as it takes to drink another glass of chilled rose.&lt;br /&gt;&lt;/span&gt;&lt;span style="color:#cc33cc;"&gt;&lt;span style="font-size:180%;"&gt;Pink apples with rosewater yoghurt&lt;br /&gt;&lt;/span&gt;Preparation time 10 minutes plus you will need to chill overnight&lt;br /&gt;Cooking time is only 10minutes and this will serve 4&lt;br /&gt;You will need;&lt;br /&gt;200g Greek- style yoghurt&lt;br /&gt;1 Tbsp caster sugar&lt;br /&gt;1 Tsp rosewater&lt;br /&gt;3 cups of water&lt;br /&gt;½ grenadine Grenadine is made from pomegranates, its sweet,pink,non-alcoholic syrup, used in cocktails and to make pink lemonade,.&lt;br /&gt;4 pink lady apples, peeled&lt;br /&gt;Pure sifted icing sugar for dusting&lt;br /&gt;12 squares Turkish Delight&lt;br /&gt;1. line a fine sieve with a square of muslin and put over a deep bowl. Spoon yoghurt into a muslin-lined sieve, cover with plastic wrap and refrigerate overnight, this allows liquid to drain from yoghurt, giving a thicker , creamier consistency. Discard liquid and put yoghurt in the bowl. Add the castor sugar and rosewater. Stir to combine, cover ,refrigerate until required.&lt;br /&gt;2. Combine z water and grenadine in a large ,deep heavy based saucepan. Bring to the boil, then reduce to a simmer. Put the prepared apples in the simmering mixture. Cover with a piece of baking paper. This will keep the apples submerged in liquid so they cook and color evenly. Cook for 8-10 minutes or until tender, plenty time to have another glass of chilled rose.&lt;br /&gt;3. Remove apples from liquid with slotted spoon. Put each apple on a plate and dust with icing sugar. Preheat oven to 200C. Use a sharp to make a deep slash in each potato; don’t cut all the way through. Put a bay leaf in each slit. Put potatoes in a shallow baking dish, sprinkle with oil and season.&lt;br /&gt;2. Pour Vermouth over z potatoes. Bake for 35-40 minutes or golden and tender.&lt;br /&gt;Fennel and Rocket Salad&lt;br /&gt;Preparation time 10 minute&lt;br /&gt;Cooking time Nil&lt;br /&gt;Serves 6&lt;br /&gt;1 large fennel bulb&lt;br /&gt;1 tray or bag of baby rocket leaves&lt;br /&gt;½ cup shaved parmesan cheese&lt;br /&gt;½ cup toasted hazelnuts, roughly chopped&lt;br /&gt;Vermouth Dressing&lt;br /&gt;¼ cup of hazelnut oil&lt;br /&gt;1 Tbsp raspberry vinegar Sea – salt flakes&lt;br /&gt;and freshly ground pepper.&lt;br /&gt;Trim base of the fennel and remove outer leaves. Using a veggie peeler, shave fennel and put in large bowl. Add rocket leaves, parmesan and Hazelnuts and toss to combine. Cover with plastic wrap and refrigerate till needed. Add dressing to salad before serving and toss.&lt;br /&gt;To make Vermouth dressing put oil , vermouth, vinegar, salt and pepper in a screw-top jar, replace the lid and shake until combined.&lt;br /&gt;Roasted tomato and red onion salad&lt;br /&gt;Preparation time;10 minutes&lt;br /&gt;Cooking time 20 mins&lt;br /&gt;Serves 6&lt;br /&gt;500g medium and baby truss tomatoes&lt;br /&gt;2 small red onions, cut into thin wedges&lt;br /&gt;10 garlic cloves, sliced&lt;br /&gt;2 Tbsp extra virgin olive oil Sea salt flakes and freshly ground black pepper&lt;br /&gt;Basil dressing&lt;br /&gt;8 large Basil leaves&lt;br /&gt;¼ cup extra virgin olive oil&lt;br /&gt;2Tbsp white wine vinegar&lt;br /&gt;Sea-salt flakes and freshly ground pepper&lt;br /&gt;1 Preheat oven to 200C. Put tomatoes, onion and garlic on an oven tray.&lt;br /&gt;Splash with olive oil and sprinkle with salt and pepper. Bake for 20 minutes or until tomatoes start to soften.&lt;br /&gt;2.To make basil dressing stack leaves and cut into shreds. Put in a small bowl, add oil, vinegar, salt and pepper and whisk with a fork.&lt;br /&gt;3. To serve, put tomatoes, onion and garlic on a plate and drizzle over dressing.&lt;br /&gt;Whole oven-poached red snapper&lt;br /&gt;Preparation time 15 mins&lt;br /&gt;Cooking time 40 mins&lt;br /&gt;Serve 6&lt;br /&gt;2 onions , thinly sliced&lt;br /&gt;2 lemons, thinly sliced&lt;br /&gt;3 flat-leaf parsley stalks&lt;br /&gt;4 garlic cloves, peeled sliced&lt;br /&gt;12 peppercorns&lt;br /&gt;2kg whole snapper, scaled,gutted&lt;br /&gt;750ml bottle Frascati wine&lt;br /&gt;80g butter&lt;br /&gt;Sea salt and ground white pepper&lt;br /&gt;1. Preheat oven to 180 C&lt;br /&gt;Put half of each of each of the onion ,lemon, parsely, garlic and z peppercorns in a large deep baking dish. Rinse fish under cold running water and pat dry with paper towel. Put remaining onion , lemon , garlic, parsley and peppercorns in fish cavity. Put the fish in the baking dish and pour over the Frascati. Cover baking dish tightly with foil.&lt;br /&gt;Bake for 30 minutes or until the flesh flakes in the thickest part of the fish when tested with a fork. Transfer fish to fish platter and cover to keep warm.&lt;br /&gt;3. Strain the cooking liquid through a sieve. Pour strained liquid into a medium heavy-based pan. Bring slowly to the boil, reduce to a simmer and cook for 10 minutes or reduced by half. Add z butter and whisk until butter is melted and the mixture has thickened slightly. Season with salt and pepper.
